Oh dang that's a hard one. I'm basing my answer on which anime that I have gone out of my way to watch multiple times and the one that I've done so the most for is Gekkan Shoujo Nozaki-kun

Although it is no longer my favorite, Robotech/Macross convinced me that I might should take Anime more seriously.
Last Exile convinced me that cinematic anime as a series is not contrained to Studio Ghibli alone.
Finally, Full Metal Alchemist in both incarnations demonstrated Anime's unique ability to tell certain types of stories very, very well.

My top favorite anime of all time is Steins;Gate for sure, which I watched 2 times subbed and once dubbed. I have also watched all of Bakuman's 3 seasons 3 times.Other honorable mentions:
Favorite sport anime: Hajimo no Ippo and One Outs
Favorite mystery/ horror anime: Higurashi,
Favorite dunno the genre but it's pretty cool: Baccano,
Favorite romance: Clannad After Story (coz emotions and stuff) , Golden time (coz in college/not in high school)
Favorite action:Black Lagoon, and Fate/0
Favorite shonen:FMA:B, ,
Favorite seinen: Parasyte
Favorite feel good: Barakamon.
Favorite Comedy: Daily Lives of High School Boys and Golden boy
