my ? is this, how can i convert say a .MKV to .AVI and still keep the subtitles in the .AVI when the .MKV sub is not hardsubbed?

sometimes i wanna put anime on my psp for watching late at nite/ on the road etc, or to stream from pc to 360 via media center but when i convert, all goes fine xcept it doesnt have any subtitles....

any ideas?
