Weltall is correct about MSG – monosodium glutamate can be produced and refined and sold solo, but yeah, people got freaked out about it and now it’s relatively rare to find it on food labels. BUT MSG also occurs naturally in many foods – it’s in tomatoes, seaweed, mushrooms, and it is also produced in aging and fermentation, so foods produced with these processes contain glutamates – like cheese and soy sauce. Yeast extract also contains it.
Glutamates are super tasty. Nom nom nom.
